This cake reminds me of the coffee and peanut cake i tried making some time ago from the show Bare Foot Contessa and here i am again with caffeine cakes !!
It’s inevitable to still have that zeal to bake just after the festive season were Christmas cakes were thrown from all angles in family circles, friends and christmas parties to name the most culprits. Cakes have that amazing finishing factor to a wonderful coarse meal whether it’s a classic cheese cake or your basic vanilla. I wont lie i am no expert to the whole choices in cakes but i am very much aware and impressed in their dessert qualities👌
Back to The Latte Cake…
My mom is very sugar conscious from the tea to literally everything. (and i don’t mean she has a sweet tooth!). I like to make sure what ever I bake does not refrain her from having a taste because of the quantities of sugar she sometimes disagrees with.
So I basically constructed this beautiful piece of treat for her evening tea…
1/2 cup granulated brown sugar
2 cups all-purpose flour
2 large eggs
1/2 teaspoon baking soda
1/2 cup unsalted butter at room temperature
1/2 cup butter milk and 1 tbsp espresso powder dissolved in 1 tbsp hot water
- Preheat oven to 180 degrees and grease a round cake tin
- With electric Mixer, mix butter and sugar until light and fluffy.
- On medium beating, add eggs on at a time
- Combine flour and baking soda together and fold into the butter mixture.
- Incorporate the espresso into the batter.
- Bake for 30 to 35 mins.
Allow the cake to cool before taking it out …
Mix 3 tablespoons of icing sugar with 1 tablespoon of water depending with the thickness you would like for the icing on the cake and drizzle it right through in linear form left to right.
Obviously with the caffeine in this cake you wouldn’t want to be mixing it with more caffeine beverages especially coffee. (MY OWN RECOMMENDATION).
