Home made Oatmeal Cupcakes

Hey guys !:)

Today i made cupcakes from scratch. Every holiday i try to find new recipes for small cakes that are easy to make especially with the most common ingredients i.e flour, butter, sugar, milk and eggs

These yummy babies  are especially good for those who love oatmeal as a cereal which is a whole lot grainy and can be combined with different nuts like pecan or walnuts. I decide to add raisins which I love but considering everyone who will dig in its their list favourite.

  1. Mix 1 1/2 cup of cake flour with  1 tsp salt, 1 tsp bicarbonate soda,2 tsp baking powder & 1/2 tsp salt in  a bowl.
  2. Whisk 1 large egg with 1 tsp vanilla essence, 3/4 cup fresh milk and 1/3 cup of white sugar ( I used brown ) in a separate bowl.
  3. Fold in the flour mixture in the egg mixture until well combined then add Oatmeal biscuit that is grounded (you can use a wooden spoon to crush them)

Bake at 205 ºc in a 12 cup cake tin for about 20 mins max.aviary-image-1481197211091

No to Simplicity!!..

I decided to test out a combination of peanut butter and plain yoghurt for a creamy layer for the cakes. It’s good to keep this type of cake simple if you’re serving friends and family to avoid maybe allergens..

However, I enjoyed the tester by adding : 10 grams sugar, 10g of icing sugar,2 tbsp plain yogurt and mixed it really well for a smooth texture and lastly sprinkled chocolate vermicelli right at the top so with a drum roll..
